Cajun Langostino Fettuccine
Ingredients:
- 8-oz. fettuccine
- 1 tbsp. butter
- 1 tbsp. olive oil
- 3 cloves garlic, crushed
- 12-oz. frozen langostino tails
- 3 tsp. Cajun seasoning
- 1 s. heavy whipping cream
- ¼ tsp. pepper
- 2/3 c. grated Romano cheese
- 1 bunch of chives, chopped
Directions:
1. Cook fettuccine as per directions on the package.
2. Melt the butter and olive oil together in a large sauté pan over medium-high heat. Add garlic, Cajun seasoning, and langostino tails. Sauté until the langostino tails have thawed completely. Remove the langostino tails with a slotted spoon; set aside.
3. Add the cream, Romano cheese, chives, and black pepper to the sauté pan, whisking continuously. Cook until the mixture has thickened, about 3 to 5 minutes.
4. Turn the heat off on the cream sauce and stir in the drained fettuccine pasta and langostino tails. Serve in bowls and garnish with additional chopped chives.
